"Everyone in my family absolutely adores Swedish pancakes. There are many choices for what to serve them with- They are excellent served warm, sprinkled with sugar and topped with lingonberry preserves. When I was in Sweden, it was popular for the children to top them with a rainbow sherbet. My brothers and sisters like the old fashioned American way of using maple syrup. Personally, I like them best either topped with raspberry or strawberry preserves, or applesauce!"

  • 3 eggs
  • 2 12 cups low-fat milk
  • 1 14 cups flour
  • 12 teaspoon salt
  • 3 tablespoons butter or 3 tablespoons margarine, melted

  • In a large mixing bowl, beat the eggs with half the milk.
  • Beat in flour and salt until smooth.
  • Stir in melted butter and remaining milk.
  • Heat a griddle or large skillet with a small amount of vegetable oil.
  • For each pancake, pour about 1/4 cup batter onto the griddle and cook over medium heat 1 to 2 minutes.
  • With a spatula, turn the pancakes and cook until golden brown, about 1/2 minute.
  • Serve immediately or keep warm while making the remaining pancakes.

  1. @ David V... You didnt "FIX" anything by adding flour - you didn't want Swedish pancakes, you wanted *regular* pancakes.... Swedish pancakes typically ARE thinner, and ARE similar to crepes (but better) :P Just try looking up pictures of them sometime.... Luckily for you though there are plenty of recipes for regular pancakes on the web.

  2. I've never had Swedish pancakes before and so I'm not too sure what they're supposed to look like, but these were delicious all the same. I agree with a previous reviewer, they turned out more like crepes but they were great with blueberry compote, fresh strawberries and maple syrup!

  3. i started making these by myself when i was 8 years old, for my little brother and sister on saturday mornings as well as making maple syrup from extract and sugar, so mom and dad could sleep in.the first time was a mess but after that my little sister took charge of my little brother and cleaned behind me as we went. we would leave a stack in the oven on low for mom and dad. i had lost this recipe so finding it here has brought back many fond memories.

  4. Absolutely perfect. They are a very thin pancake .I have had the authentic swedish pancakes and these are excellent. I substitute buttermilk for one and a half cups of the milk and 1 cup of milk( and we enjoy them the very best like that as it gives them a wonderful sourdough flavor( may sound strange but please try it before you make up your mind)) and i add a little more milk as buttermilk is so thick. If you want them even thinner just add a little more milk than that, just not too much.. I add the eggs last and only beat just enough, then you only have to mix it and use a very hot smoking griddle and they will be great. This is my favorite swedish pancake recipe so far. Fabulous!!! ??

  5. Perfection!! I woke up with a craving for Swedish pancakes like my mom used to make. This was exactly it!! My 18 month old cannot get enough of them!! I put the butter in the microwave to melt it and forgot it entirely, but did butter the griddle heavily between batches, so probably got about the same amount of butter in the end. Next time I'll follow the recipe! :-)

  1. as to tweeks if these are done right a little syrup and butter is all they need they are so rich that you do not need anything else. though in sweden they are served as dessert rolled like an ice cream cone filled with whipped cream and lingamberry's yum.

  2. No tweaking needed. I was looking for traditional and that's what I got - just like I grew up with. Our Grandmother used to make a foot high stack of them and then we'd visit and mow them all down not really realizing how long it takes to make that many - such piglets :D
